•1 cup packed brown sugar
•1 cup soft butter
•¼ cup black molasses
•1 large egg
•1 teaspoon vanilla
•2 cups of all-purpose flour
•2 teaspoons of baking soda
•1 teaspoon ground cinnamon
•1 teaspoon ground ginger
A cup of granulated sugar for rolling
Preheat the oven at 325 degrees. Line a large baking sheet with parchment paper or non-stick cooking spray, and set it aside.
In a large bowl using a hand mixer, or in the bowl of a stand mixer fitted with the paddle attachment, whisk together the brown sugar, butter, molasses, eggs, and vanilla until well blended.
Mix flour with baking soda, cinnamon, ginger and salt.
Shape the dough with a rounded tablespoon heaped into 1-inch balls. Dip cookies in the granulated sugar and placing them 2 inches apart on the prepared baking sheet.
Bake in a preheated oven for 13-15 minutes, until tender. Removing cookies to a wire rack to cool directly .
