°1 cup of sugar
°1/2 cup unsalted butter, soft
°3 mashed ripe bananas
°2 cups flour for all purposes
°1 teaspoon of baking powder
°1/2 teaspoon baking soda
°1/4 teaspoon of salt
°1/2 Cup of Sweet India Nuts
°1/2 cup of fresh pineapple
Preheat oven to 350°F (180°C). Grease a 9×5″ loaf pan.
In a large mixing bowl, whisk together sugar and butter until light and smooth. Add the eggs, one at a time, then the mashed bananas.
In another mixing bowl, whisk together flour, baking powder, baking soda and salt. Adding dry ingredients to wet ingredients and mix to combined. Stirring in coconut also pineapple.
Pour mix into prepared loaf pan and smooth the top.
Bake the banana bread for 60 to 70 minutes, or until a toothpick comes out clean in the middle.
Letting banana bread cool in pan for 10 minutes, then transfering it to a wire rack to cool completely. Serve Hawaiian Banana Bread warm or at room temperature sliced and topped with butter or cream cheese.
