Broccoli Copycat Broccoli and instant cheddar soup are probably one of my favorite dishes made to order. Whether you buy it in a bread bowl or a regular bowl, this soup is perfect. You get that creamy, cheesy texture with chunks of broccoli and carrots that make every bite like a slice of heaven.
* Ingredients :
° 1 pound of chopped fresh broccoli
° 8 ounces of cheddar cheese
° 1 small onion, chopped
° 3 cups of chicken broth
° 2 cups of milk or heavy cream
° 1 cup of grated carrots
° 2 tablespoons of hot sauce (optional)
° 1/4 teaspoon nutmeg
° 8 0z cream cheese
* Instructions :
Place the chopped onion, carrots, broccoli, nutmeg and chicken broth in the pot.
Add 8 oz of cream cheese.
Place in the high pressure manual for 4 minutes.
Quickly release and add milk or heavy cream.return the pot to sauté until about 5 minutes.
Do not bring to a boil
Add cheese and hot sauce after cheese melts.
Serve with bread or crackers.
